This says a loud that they are going to be one from now on. The couple usually will retain the unity vial as a memorable keepsake. Children (if they will be part of new family) also are included and they take sand from both bride and the groom and pour into the unity vial.
With the three standard formats you can plan your wedding with any one of them because a wedding is only partially complete without a unity wedding ceremony.
