Some people like to have candles that are tall enough to actually sit on the bottom stones so that they do not float and run into the flowers you have in there. Although, if they catch on fire, you would have them in a bowl of water already, so there's nothing to worry about.
Overall, there are tons of different ways you can go with the wedding centerpiece ideas. Really what you have to do is make sure that you come up with an idea that is prefect for your wedding.
